Double Trouble Indeed- Whoopie Pies

After trying Whoopie pies from starbucks, we decided it would be fun to try and make these as our first baking project together.
These ones from Stabrucks are chocolate mint and red velvet.
Emily found a recipe online for chocolate mint whoopie pies, and had most of the ingredients, so we decided to give it a shot.
The steps involved are fairly straightforward. Mix the ingredients to make the batter

While the pies are baking, make the filling for the middle. It was Emily's first time using an electric mixer. The bowl we used was also not tall enough, so it was a bit of a mess.  It turns out, it is just butter and icing sugar.Once that is done you add in crushed pieces of candy cane for the mint part.
After the 11 mintues of baking, we openned the oven only to discover our mini pies were huge. Turns out we made them way too big.
They also didn't taste like much. More like cardboard, and less chocolate. For this reason, we are not posting the recipe we used. It was definitely a learning experience and for the next time we will be more selective in picking recipes (higher ratings or better sources)
We decided to cut our losses and re-make the pies with cake mix. The problem with using cake mix is that the batter didn't rise very much and our pies were fairly flat. Here is what our whoopie pies ended up looking like at the end

Although the pies didn't turn out great, it was still a lot of fun. Hopefully our next attempt will turn out better..

They don't look that flat! At least not in the close up lil...add some red lines and they would look pretty much the same as the ones from Starbo's :)
