This recipe is a lot healthier than it looks. It is made-up mostly of avocado and banana. Who would have thunk it. The recipe says it makes 2 servings and I divided it into 3 so they would be smaller- saintly, I know!- I then processed to eat 2! And I licked the bowls.
The recipe is adapted from Practical Paleo, by Diane Filippo- and then I added coconut whipped 'cream'- completely optional
Ingredients:
- 2 avocado ( I used 1.5 because I wanted to save half for a salad)
- 1/4 cup unsweetened cocoa powder
- 2-4 spoons coconut milk (I'm sure this could be substituted with regular milk)
- 1 ripe banana (optional) I put it in and the banana flavour is very strong
- 1- 4 tablespoons maple syrup (I used 2)
- 1/2 tsp vanilla extract
- pinch cinnamon
- pinch salt
- shredded coconut or cocoa nibs for garnish
Blend everything in a food processor or blender. I added some coconut water from the coconut milk jar to make it more liquid, you could just add more coconut milk or water, depending how thick you want it. I made it in the magic bullet and it was struggling a bit. Serve in small dishes and garnish with coconut or cocoa nibs.
If you want to make coconut whip cream- follow this recipe- I am too lazy to write it up right now. Mine didn't turn out super thick, and didn't really look like whip cream, but still tasted good.
