Decadent Chocolate Cake

This cake is a family favourite for birthdays and holidays. We were asked to bring a chocolate cake for Christmas day at family friends. Since we know this one is delicious, I decided to make it.



It is from Silver Palate Cookbook.

Ingredients:
-1 cup boiling water
- 3 ounces unsweetened chocolate
- 8 tablespoons (1 stick) butter
- 1 teaspoon vanilla extract
- 2 cups granulated sugar
- 2 eggs separated
- 1 teaspoon baking soda
- 1/2 cup sour cream
- 2 cups less 2 tablespoons flour
- 1 teaspoon baking powder

Directions:
1. Preheat oven to 350. Grease and flour a 10 inch tube pan
2. Pour boiling water over chocolate and butter, let stand until melted




Stir in vanilla and sugar, then whisk in egg yolks one at a time, blending well after each addition. (I put it all in a larger bowl)


3. Mix baking soda and sour cream (it will expand a fair bit) and whisk into chocolate mixture
4.  Sift flour and baking powder together and add to batter mixing thoroughly
5. Beat egg whites until stiff but not dry (it should form peaks when you lift the beaters)


Stir a quarter of the egg whites into the batter and put the rest on top and gently fold in.


6. Pour batter into prepared pan. Bake on middle rack of the oven for 40-50 minutes. Cool in pan for 10 minutes before removing, cool completely before frosting.

Chocolate Icing:
- 2 tablespoons unsalted butter
- 3/4 cup semi sweet chocolate chips
- 6 tablespoons heavy cream
- 1 1/4 cup confectionar sugar
- 1 teaspoon vanilla extract

Place all ingredients in a sauce pan over low heat and whisk until smooth.


Cool slightly, and then ice cake while still warm.


I used a stencil and put some icing sugar on top, with trees and bells to make it look more festive.
