Healthy Pancakes

Variation with strawberries


Variation with chocolate chips- served with berries and asian mango
Something about the weekend makes me crave pancakes. I picked up a bowl to make oatmeal and then thought, why not, I will and make some healthy pancakes. These are variations on "protein pancakes". I just invented the recipe as I went, and it was very simple.



Ingredients:
- 1/3 cup oatmeal
- 1/3 cup non fat cottage cheese (you can substitute this for yogurt or milk however if you do so be sure to add in a pinch of salt)
- 1-2 tablespoons whole wheat flour
- 1 tsp baking powder
- 1 egg
- 1 tsp vanilla
- 1tsp cinnamon
- 1 tsp sugar or brown sugar
-1 tsp canola oil (I put this in the second time I made these pancakes and it just made it easier to flip them)

optional
-Strawberries, chocolate chips, blueberries..

If you want more protein feel free to add in a tablespoon of whey protein powder.

Directions:
Blend all ingredients together (including some of strawberries if desired). Cook on a non-stick frying pan. If using chocolate chips or blueberries, add them on top of pancakes once they are in the pan before flipping them over. Serve with whatever topping suits your fancy, maple syrup, jam.. my personal favorite is to sprinkle them with sugar and lemon juice.
