Fresh muesli with almonds
In order to maximize my 3 weeks with my new favourite cookbook (Power Foods), I prepared this last night so I'd be able to eat it this morning. I was intrigued by this recipe, as whenever i've tried making muesli with yogurt it has come out really thick and sticky and I didn't like the texture. This recipe adds milk, which helps make it a bit less dense. The toasted oats are delicious. Recipe serves 2.
Ingredients:
3/4 cup oats
sliced almonds ( I used whole almonds and cut them in halves)
1/2 cup plain yogurt- (greek or regular)
1/4 cup milk - I used light vanilla soy milk, but any kind works.
Directions:
-Heat oven to 350. Place oats and almonds on a baking sheet and bake for about 8 minutes, until fragrant.
-Mix 3/4 cup of oats and almond mixture with yogurt and milk. Cover and put in the fridge for 1h- overnight. Reserve remaining oats/almonds
- Divide yogurt mixture into 2 bowls, add fruit of your choice, sprinkle with remaining oats and almonds and drizzle with honey.
