Orzo with Spinach and Feta


This dish was supposed to be called- spinach with orzo and feta, but since I had no idea how much 1/2 pound of orzo was, I ended up with much more orzo to less spinach. This dish is easy to prepare, and the fresh mint makes it summery and fresh! Thanks to my friend Kristin for helping me decide what to make last night, as I was being very indecisive. The recipe is from Martha Stewart, I spotted the recipe in Claire's cookbook when i was in Boston.  It's good warm or cold as a salad.

Ingredients:
- 1/2 pound orzo (I'd say 3/4 cup- if you have a scale that's even better)
- 1 pound spinach or baby spinach
- 1/2 cup fresh mint
- 1/2 cup feta (light feta works too)
- 2 T fresh lemon juice
- 1 T olive oil
salt and pepper to taste

Directions:
Cook orzo according to package instructions. Add in spinach. Drain. Transfer to bowl and mix in other ingredients. enjoy!
