Coconut Butter
Store bought coconut butter is delicious, however it is quite pricey. I read online about someone adding coconut butter to their oatmeal and it sounded so delicious, I immediately looked for recipes for making your own coconut butter.
I was astounded by how simple it sounded. All you need is 2 cups shredded unsweetened (dried) coconut (or sweetened if you prefer), and a food processor. I was also astounded that it said to process the coconut for 19 minutes.. um is that even possible?
Well I gave it a try, and luckily enough the Cuisinart did not overheat and die. I had read that over the first 5 minutes it becomes finer, then gradually over the next 10 minutes it becomes more pasty. Stop often and scrape down the sides of the processor with a spatula. After about 15 minutes, I saw my "butter" was just not obtaining a spreadable consistency, so I added a few tablespoons of water and that did the trick!
It doesn't taste as smooth as the store-brought brands but is still delicious!
