Strawberry Rhubarb Crisp
I was having my parents over for dinner yesterday. The day before, I warned them that there would be no dessert. I expected them to say 'that's fine honey, no problem' or 'we don't need dessert, anything you make is wonderful' or 'don't go to trouble for us'. Instead,. what i got was dead silence. So I figured I should make a dessert. I found rhubarb in my fridge that I'd forgotten about, that I bought at the market, and frantically started looking through my cookbooks for a recipe. I came across a crumble recipe in Canadian Cookbook, that looked quite simple. It was super easy to make and. turned out great, I've never made a crisp before.
Ingredients:
- 4 cups sliced rhubarb
- 2 cups strawberries, halved
- 1/3 cup brown sugar
- 2 tablespoons flour

Topping:
- 1 cup flour
- 1/3 cup brown sugar ** the original recipe called for 2/3 cup but I found it quite sweet. I made it again with 1/3 and it was just right!
-1/3 cup melted butter
- 1 tsp orange rind
Directions:
1. Preheat oven to 350F
2. Mix together fruit, brown sugar and flour and put in a glass dish (either 9 inch square one or a round one)
3. Put flour, brown sugar and orange rind in a bowl, drizzle with butter. Stir until crumbly. Pour mixture on top of fruit
4. Bake for 45- 60 min

Also I just got more rhubarb as part of my veggie share, so I will likely make this again soon!
