Cinnamon Muffins

So I made these muffins a while back but decided to post the recipe. They are really filling, healthy and delicious! I think I will make them again soon.




This photo is actually taken of the muffins Rachel made using the same recipe. I don't have a photo of the ones i made..

The recipe comes from a cookbook called 100 healthy foods.

Ingredients:
  • 1 cup high fiber cereal (such as all bran)
  • 1 cup skim milk
  • 1 cup whole wheat flour
  • 1 Tbsp baking pouder
  • 1/2 cup brown sugar
  • 1 tsp cinnamon
  • 1/2 tsp grated nutmeg
  • 2 eggs 1/2 cup raisins
  • 5 tbs canola oil ( this could be reduced)
 Instructions:
 Put the cereal and milk in a bowl and let sit for 5 minutes. Meanwhile preheat oven to 400 degrees farenheit (200 celcius) and line a muffin pan with liners or non stick spray. Sift flour, baking pouder, cinnamon, and nutmeg together. Mix in brown sugar and raisins. Beat eggs and oil together.  Pour eggs/oil and cereal mixture into dry ingredients and mix lightly (do not overmix). Pour into cake pan and bake for 20 minutes or until golden brown.

 Let cool for 5 minutes before taking out of the pan. put on rack and let cool completely.

Look delicious and sound so healthy! made apple cinnamon muffins before that I love, also had raisins in them, such a good combo
