Waldorf Salad- 2 variations

With walnut oil and cider vinegar

With yogurt
I was craving something light and healthy. I openned the fridge and saw cellery and apple, and decided to make a waldorf salad. The original recipe has mayo (not so healthy) so I looked up a several different recipes for a lighter version. I couldn't decide whether to make a yogurt dressing or an oil/vingar dressing, so i decided to make both. I ate the yogurt part right away for dinner and saved the other type for my lunch the next day, as I thought it may keep better. Both were good but I think i prefer the yogurt variation. I guess it just depends on what you are in the mood for. The quantities can easily be adapted and substitutes can be made based on what ingredients you have in the house.

Ingredients:
- 2 apples, chopped
- 5 stalks celery, diced
- 1/4 cup raisins or grapes
- 1 tablespoon lemon juice
- 1-2 stalks green onion (optional)
- roasted walnuts ( bake walnuts at 350 for about 10 minutes, until fragrant)
 I didn't have walnuts, so I used sweet and spicy pecans from Trader Joe's ( Thank you Claire!). These are  my favourite, and you only need a couple.
-salt and pepper to taste

Yogurt dressing
1-2 T plain yogurt
pinch cinnamon

Oil/Vinegar Dressing
 1-2T walnut oil
 1 T cider vinegar 

Directions
Put apples, celery, green onion and raisins in a bowl and toss with lemon juice. Add dressing and nuts

Such a quick and easy recipe. Next time I may add in some chicken.
