Taco Bowl Salad with Steak


I love salads in a taco bowl, and I also love steak, so when I saw this recipe featured in the Cooking Network magazine, I decided to give it a try.  It also reminds me of a really good salad I've had at a mexican place down the street from my work. In fact, Emily, GG and I are long overdue to go back there. They even give you deep fried ice cream on for your birthday and its delicious. But work has been hectic beyond belief lately. I haven't been able to get away at lunch, let alone eat at sit down restaurant. This salad is a good fill in- for now!





As usual, I didn't quite have all the ingredients (no cucumbers or tomatos, but I did have avovacos)
Ingredients:
Tortilla bowl:
- flour tortillas

Steak:
- 1tsp garlic powder
- 1 tsp onion flakes (didn't have)
- 1 tsp oregano
- 2 tsp ground cumin (didn't have)
- 2 tsp chile powder
-3 scallions, finely chopped,
- 4 tsp worcesher sauce
- 2 T extra virgin olive oil
- salt and ground pepper
- 3/4 pound sirloin steak (about 1 inch thick)
- 1 bell pepper thinly sliced
- 1 onion, halved and thinly sliced

Salad:
- 1/4 cup mayo
- 2/3 cup buttermilk- If you don't have any 9like me!) add 1 T lemon juice or vinegar to 1 cup milk and let sit for 5 minutes
-1 cucumber-- or avocado!
-romaine lettuce
-1/4 can black beans, rinsed and drained
- black olives ( didn't have)
-cheddar cheese, shredded.

Directions:

The directions look really complicated/long but they aren't hat bad. The key is to reading them properly. Which I did not do.  Once you combine the herbs for the steak marinade, you only use part of it and save some for the salad dressing! if you forget to do this, you will need to re-make the spice mixture which was a bit of a pain.

1. To make the tortilla bowl(s), move a rack to the bottom half of the oven. preheat to 450. Place bowl(s) (or a can ) upside down on a baking sheet and cover with tinfoil.
2. place water and 1 T olice oil in a shallow dish, dunk tortilla for about 5 seconds and then drape over tin foil, pleating as necessary.
3. Bake for 5 minutes and then flip it over and bake another 5 minutes.
4. To make the steak, whisk spices, scallion w. sauce, olice oil, salt and pepper in a bowl. put the steak in a shallow dish and rub with spice mixture. RESERVE THE REST FOR DRESSING. Add bell pepper and onion, cover and refrigerate 30 min- 4 hours
5. heat a skilled voer high heat and sear the steak about 5 minutes per side, the transfer to a cutting baord, elaving peppers and onions to cook an additional few minutes. thinly slice steak againstt he grain
6. assemble salad, whish mayo buttermilk, and spice mixture untill smooth, add lettuce and veggies, beans olives etc. top with steak, bell pepper and onion! enjoy

For leftovers: I warmed up a tortilla and put in the steak, onions and pepper. I added some sour cream and avocado and voila,  It tasted just like a fajita!
