Fall is in the air! Nothing says fall more then pumpkin! I keep seeing pumpkin muffins, scones, lattes.. and so this morning I decided to make some of my own muffins. I woke up early and thought it would be nice to bake these and bring them into work. I think people enjoyed them. I have had a couple requests for the recipe. Here it is! I found a basic recipe on allrecipes.com and modified it a bit. For one, I used pumkin puree (canned) rather then cook an entire pumkin and make the pureee myself. Hey, I just don't have that kind of time in the morning!
Ingredients
- 2 cups canned pumpkin puree
- 2 cups white flour
- 1 cup whole wheat flour
- 1.5 cups white sugar
- 0.5 cups brown sugar
- 2 teaspoons baking soda
- 1/2 teaspoon baking powder
- 2 teaspoons ground cloves (I omitted)
- 2 teaspoons ground cinnamon
- 2 teaspoons ground nutmeg (I omitted)
- 1 teaspoon ground allspice
- 1 teaspoon salt
- 2/3 cup vegetable oil
- 3 eggs
- preheat oven to 350F
- mix eggs, pumkin puree and oil. I used my standup mixer (finally!) and it worked well, however a regular mixer or just a whisk would work too.
- In another bowl add the dry ingredients
- Mix in pumpkin mixture into the dry ingredients
- put into greased or lined or non stick muffin pan- makes about 15 muffins
- sprinkle the top of the muffins with cinnamon sugar (mix about 2 T sugar and 1 tsp cinnamon)
- baked 20-25 minutes.
