Apple Pie Muffins

I swear, I am not obsessed with apples and apple pie recipes! ..however I got  Canadian Living - Everyday Favourites cookbook from the library and this was the first recipe that caught my eye. I love muffins with a topping, but had never attempted to make some myself.

This recipe is quick and simple! Be warned though, it may drain your supply of brown sugar!!









I think they turned out well! The apple makes them really moist.


The Recipe said it makes 16 muffins but I had enough batter to make 18.


2 ¼ cups- all purpose flour
1 ½ cups packed brown sugar
1tsp baking soda
½ tsp salt
1 egg
1 cup buttermilk
½ cup butter, melted
1tsp vanilla
2 cups diced peeled apples


Topping:
½ cup packed brown sugar
½ cup pecans
1/3 cup all purpose flour
1 tsp cinnamon
2 tbsp butter, melted

Directions:
-Line large muffin cups with paper liners
- Topping: In bowl, stir together brown sugar, pecans, flour and cinnamon; drizzle with butter, tossing with for. Set aside.
-In large bowl, whisk together flour, sugar, baking soda and salt. In separate bowl whisk together egg, buttermilk, butter and vanilla; pour over dry ingredients. Sprinkle with apples; stir just until dry ingredients are moistened,
- Spoon into prepared cups; sprinkle with topping. Bake in centre of 375F oven until tops are firm to the touch, about 25 minutes. Let cool in pan for 2 minutes. Run metal spatula around muffins to loosen, transfer to rack and let cool.

I found this recipe last month - SO delicious! A word to the wise, if you're thinking of adding some whole wheat flour to 'healthy' it up... not so delicious since it dries it right out. Carolyn :)
